Creamy Risotto with Brown Mushrooms

Risotto is an Italian classic which consists of rich but simple ingredients. But great Risotto is quite hard to find, maybe because it has to be cooked to perfection. I had many things on my plate when I ordered Risotto from rice pudding to rice salad. I will reveal my perfect Risotto Recipe.

Risotto ist ein Klassiker in der italienischen Küche. Ein eigentlich einfaches Gericht, das man in den meisten Restaurants jedoch nicht bestellen sollte. Risotto ist nicht gleich Risotto. Von Reissalat bis pampigem Milchreis hatte ich schon vieles auf dem Teller, doch mit meinem Risotto hat das nicht viel zu tun. 
Ich teile mit euch nun mein Geheimrezept.

So what is different in my Risotto? For this recipe Calorie-Counting is not necessary. Do not try to cut down on the butter and the cheese - it has to be cheesy and creamy. Otherwise it is not a proper Risotto - believe me.

What you need?

300 - 400g Risotto Rice
500g Brown Mushrooms
150g Butter
2 Shallots or 1 Onion
1 Liter of Vegetable Stock
200g Parmesan
a splash of white wine
a splash of olive oil 
Pepper

How to cook the Risotto?

Start by dicing the Shallots or Onions very fine and fry them in the olive oil until they have a bit of colour. Then add the rice and fry it with the onions just for half a minute and stir everything around constantly. Risotto has to be stirred the whole time. Now the splash of white wine is added as well as the vegetable stock but only cover the rice and do not put all the liquid in. Everytime you feel that the rice gets to dry fill up the vegetable stock until coated again. Do that until the rice is cooked through. Meanwhile cut the mushrooms and add them 10 minutes before the rice is ready - probably after 15 minutes. Usually the Risotto takes about 30 minutes to cook but it depends on the rice. Now stir, stir and stir. When the rice is done and the mushrooms are cooked as well it is time to remove the pot from the heat and add the butter and parmesan and stir it again. Then add Pepper but no salt since the stock and the Cheese is quite salty. Taste it now and serve it with some extra Parmesan on top. 

Do not try to warm it up or eat it cold, it does not taste good so do not cook bulk portions.

Mein Risotto ist sehr cremig, was an den nicht gerade fettarmen Zutaten liegt. Kein Diätessen, aber dafür ein Gaumenschmaus. Nicht so zaghaft mit der Butter und dem Parmesan umgehen. Das sind die Key-Ingredients, also bitte auch nicht and der Qualität der Zutaten sparen. 

Zutaten:

300 - 400g Risotto Reis
500g Braune Champignons
150g Butter
2 Schalotten oder 1 Zwiebel
1 Liter Gemüsebrühe 
200g Parmesan
Weißwein zum Ablöschen
Olivenöl zum Anbraten
Pfeffer

Kochanleitung:

Zuerst die Zwiebel oder Schalotte fein würfeln und im Olivenöl andünsten. Danach den Risotto Rice hinzugeben und kurz darauf mit dem Weißwein ablöschen, dann mit der Gemüsebrühe aufgießen, doch nur den Reis bedecken, nicht die komplette Flüssigkeit. Wenn der Reis zu trocken wird immer in kleinen Mengen die Gemüsebrühe hinzugeben. In der Zwischenzeit die braunen Champignons in Scheiben schneiden und ungefähr nach 15 min hinzugeben. Nach circa. 30 min ist der Risotto fertig, die Kochzeit ist jedoch unterschiedlich je nach Reisart. Wenn der Reis al dente ist, dann den Topf vom Herd nehmen und die Butter sowie den Parmesan hinzu geben. Dann etwas Pfeffer und fertig ist der Risotto. Am besten sofort servieren.

Tip: Risotto schmeckt kalt sowie aufgewärmt nicht, also nicht zu viel davon kochen.
